Healthy Toasted Coconut Almond Balls

These are the perfect little snack or dessert and taste so so good!!! It has toasted coconut which adds an amazing flavour but you can use raw coconut too! I dipped them in the chocolate but you can leave them plain too!

Healthy Toasted Coconut Almond Balls

  • prep time: 15 min
  • freeze time: 20 min
  • total time: 35 min
  • makes 10-12 balls

Ingredients:

  • 1 1/2 cups shredded coconut
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil - measure after melted
  • 1/4 melted coconut butter
  • 1/4 tsp almond extract
  • 1/2 cup almond flour
  • Pinch of salt
  • 2/3 cup chocolate chips + 1 tablespoon coconut oil

Instructions:

  1. Start by spreading the shredded coconut onto a pan and toasting at 325°F for 5-10. Make sure to keep checking it because it’s done very fast and can burn!

  2. Add all the ingredients together in a bowl and mix until combined.

  3. Form into balls, place them onto a parchment lined sheet and freeze for 10-15 min.

  4. If you are dipping them in chocolate, melt the chocolate chips and coconut oil together until smooth.

  5. Roll the balls in the chocolate and freeze for an additional 5-10 min or until hard.

  6. Sprinkle with more shredded coconut and enjoy!
