Healthy Toasted Coconut Almond Balls

- makes 10-12 balls
Ingredients:
- 1 1/2 cups shredded coconut
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil - measure after melted
- 1/4 melted coconut butter
- 1/4 tsp almond extract
- 1/2 cup almond flour
- Pinch of salt
- 2/3 cup chocolate chips + 1 tablespoon coconut oil
Instructions:
Start by spreading the shredded coconut onto a pan and toasting at 325°F for 5-10. Make sure to keep checking it because it’s done very fast and can burn!
Add all the ingredients together in a bowl and mix until combined.
Form into balls, place them onto a parchment lined sheet and freeze for 10-15 min.
If you are dipping them in chocolate, melt the chocolate chips and coconut oil together until smooth.
Roll the balls in the chocolate and freeze for an additional 5-10 min or until hard.
Sprinkle with more shredded coconut and enjoy!
