Healthy Dark Chocolate, Cardamon, and Pistachio Cookies
Let me tell you, these cookies smell so amazing!!! The dark chocolate, cardamom and pistachio combo tastes so so good together! I haven’t tried to make many sweet desserts with pistachios but I’ll definitely be making more in the future!!
Healthy Dark Chocolate, Cardamon, and Pistachio Cookies

- makes 15-16 cookies
Ingredients:
- 1/2 cup softened coconut oil (not melted!)
- 1/3-1/2 cup coconut sugar (depending on how sweet you’d like the cookies!)
- 1 flax egg (1 tablespoon ground flaxseed + 2 1/2 tablespoons water, mix and let it “gel” for 5-10 min.)
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup chopped pistachios
- 1/2 cup chopped dark chocolate
Instructions:
- Start by making the flax egg in a small bowl and setting it aside. 
- In a medium bowl cream together the coconut oil and coconut sugar. Make sure the mixture is smooth and there are no coconut oil chunks. 
- Add in the flax egg and vanilla extract and mix. Add in the rest of the ingredients except for the pistachios and chocolate and mix. 
- Gently fold in the chopped pistachios and chocolate chunks until combined. 
- Roll into balls and flatten onto a parchment lined pan. Bake at 350°F for 10-12 min or until golden brown. Let the cookies cool for 10 min.
