Healthy Peanut Butter Iced Oatmeal Cookies


These cookies are so fluffy, chewy and have the best cookie texture. This recipe makes a lot of glaze so feel free to half it for a smaller portion! The peanut butter can also be subbed for any nut/seed butter!

Healthy Peanut Butter Iced Oatmeal Cookies

  • makes 10-12 medium cookies

Ingredients:

  • 2/3 cup softened coconut oil (not melted!)
  • 2/3 cup coconut sugar
  • 1/2 cup peanut butter
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 1/2 cup rolled oats
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

For the glaze:

  • 1/2 cup melted coconut butter
  • 1 tablespoon honey or maple syrup
  • 1/4 - 1/2 cup warmed non-dairy milk (I used macadamia nut milk!)

Instructions:

  1. In the large bowl, cream together the coconut oil and coconut sugar until smooth. Add in the vanilla, egg, and peanut butter.

  2. In a separate bowl, mix together the dry ingredients until combined.

  3. Add the dry ingredients to the wet ingredients and mix until combined. Let the dough chill in the fridge for at least an hour.

  4. Use a cookie scoop or a spoon to scoop out dough balls and arrange them about 2 inches apart - they spread so make sure to leave enough room!

  5. Bake at 350° for 12-13 min or until golden brown. Let the cookies cool while you make the glaze.

  6. To make the glaze, melt the coconut butter and honey together. Slowly add the non dairy milk until you reach your desired consistency.

  7. Drizzle the glaze on top of the cookies and let them chill in the fridge for an additional 20-30 min until set.

  8. Enjoy!
