Vegan Carrot Veggie Meatballs

Perfect little veggie balls to add in to pasta (I used lentil pasta!), salad, or a soup! You can also cook them in the frying pan and sub them for ground beef in a recipe!

Vegan Carrot Veggie Meatballs

Healthy Num Num | Michelle

  • prep time: 15 min
  • cook time: 20 min
  • total time: 35 min

Makes 10-12 balls


Ingredients:

  • 3 medium carrots sliced (about 1 cup)
  • 1 cup chopped mushrooms
  • 1 cup rolled oats
  • 1/4 cup nutritional yeast
  • 2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt + pepper to taste

Directions:

  1. Blend together all of ingredients in a food processor. Blend until you can form meatballs without the dough falling apart.

  2. Bake at 350°F for 20-25 min!
