These burger bowls are made with caramelized onion beet beef burgers, roasted sweet potato, and my favourite signature salad (see below for lemon tahini dressing recipe)!! I also added chipotle mayo and regular mayo to complete this dish and it was amazing!! This tasted so yummy and I loved loved loved this dinner!!


Healthy Loaded Burger Bowls

Servings: 4-6


Ingredients:

Caramelized onion beet beef burgers:

  • 1 pound lean ground beef
  • 2 eggs
  • 2 medium white onions
  • 1 medium beet shredded
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • two teaspoons soy sauce or tamari
  • 2 tablespoons avocado oil (for frying)

Sweet potato:

  • 1 large sweet potato
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon avocado oil
  • 1/2 teaspoon salt

Salad (don’t need to measure the veggies!):

  • salad greens
  • cucumber
  • bell pepper
  • red pickled onions
  • grape tomatoes
  • sunflower seeds
  • lemon tahini dressing (see below)

Lemon tahini dressing:

  • 1/2 cup tahini
  • 1/2 cup cold water
  • 1 tablespoon garlic powder
  • juice from two lemons
  • 1/2 teaspoon salt
  • pinch of black pepper
  • 1/8 teaspoon cumin (optional)

Instructions:

For the burgers:

  1. Heat up the avocado oil in a pan on medium low heat. Start by caramelizing the onions for 10-15 minutes stirring frequently. Then add the shredded beet, garlic powder, smoked paprika, and salt. Cook for another 10-15 min.

  2. Add the onion beet mixture to a bowl and cool for 10-15 min. Then add the rest of the ingredients and mix until combined.

  3. Fry each patty in some more avocado oil on medium low heat for 4-5 min on each side or until cooked through! (Mixture will still have a pink look because of the beet!)

For the sweet potatoes:

  1. Mix all the ingredients together and bake at 425°F for 20-25 min.

For the dressing:

  1. Mix all the ingredients together and enjoy!

Notes: Make sure the water is cold because it will make the tahini mixture creamy!
