Healthy Chocolate Peanut Butter Cups

Ingredients:
For the peanut butter filling:
- 1/2 cup crunchy peanut butter
- 1/2 tablespoon coconut flour
- 1 tablespoon maple syrup
- pinch of salt (if your peanut butter isn’t salted)
For the chocolate (or you can melt chocolate chips!):
- 1/2 cup melted coconut oil
- 1/2 cup cocoa powder
- 1/4 cup maple syrup
Instructions:
Start by either making the chocolate mix or melting your chocolate chips. Spoon 1-2 tablespoons of the chocolate into the bottom of a muffin liner. Don’t use more than half the chocolate for this. Tilt the pan slightly and gently turn to coat the sides.
Make the peanut butter filling in a small bowl. Scoop out around 1 tablespoon of dough and roll into a ball. Flatten the ball to a disk and place in the centre of the cups.
Pour the remaining chocolate over the peanut butter filling to cover it completely.
Place in the freezer for 15-20 min or until it is hardened. Store in the fridge or freezer.
