Healthy Chocolate Coconut Macaroons

A little back story about this recipe:

My Naturopath Dr. Gina Neonakis (She is so so nice and amazing I definitely recommend her and if you are in the area!! Thank you again if you are reading this :)) recommended me the original recipe for these macaroons to try. I made a few changes and adjustments, like adding ground flaxseed, which is rich in omega-3 and fiber, and these are the finished product!

They are so so yummy and perfect for a snack or dessert. These macaroons also remind me of my chocolate granola in a cookie form, which is also a yummy recipe!

Healthy Chocolate Coconut Macaroons

Healthy Num Num | Michelle

  • prep time: 15 min
  • cook time: 20 min
  • total time: 35 min

Servings: 6-8


Ingredients:

  • 1 cup rolled oats
  • 3/4 cup melted coconut butter
  • 3/4 cup shredded coconut
  • 1/4 cup cocoa powder
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips + extra for the top!

Instructions:

  1. Start by melting the coconut butter and mixing it together with the cocoa powder in a medium bowl until smooth.
  2. Add the rest of the ingredients except for the chocolate chips to the bowl and mix until combined.
  3. Gently mix in the chocolate chips. Scoop and shape into balls, place, and flatten onto a parchemnt lined tray.
  4. Bake the macaroons for 20-25 min and let them cool for 10-15 min.
  5. Enjoy!
