Healthy Chocolate Coconut Macaroons
A little back story about this recipe:
My Naturopath Dr. Gina Neonakis (She is so so nice and amazing I definitely recommend her and if you are in the area!! Thank you again if you are reading this :)) recommended me the original recipe for these macaroons to try. I made a few changes and adjustments, like adding ground flaxseed, which is rich in omega-3 and fiber, and these are the finished product!
They are so so yummy and perfect for a snack or dessert. These macaroons also remind me of my chocolate granola in a cookie form, which is also a yummy recipe!
Healthy Chocolate Coconut Macaroons

Servings: 6-8
Ingredients:
- 1 cup rolled oats
- 3/4 cup melted coconut butter
- 3/4 cup shredded coconut
- 1/4 cup cocoa powder
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup dark chocolate chips + extra for the top!
Instructions:
- Start by melting the coconut butter and mixing it together with the cocoa powder in a medium bowl until smooth.
- Add the rest of the ingredients except for the chocolate chips to the bowl and mix until combined.
- Gently mix in the chocolate chips. Scoop and shape into balls, place, and flatten onto a parchemnt lined tray.
- Bake the macaroons for 20-25 min and let them cool for 10-15 min.
- Enjoy!
