Fluffy Blueberry Muffins


These muffins are so so fluffy and are the perfect little snack or dessert! I added 1/4 cup of maple syrup for sweetener but feel free to add more if you’d like it sweeter!


Fluffy Blueberry Muffins

Makes 10-12 muffins


Ingredients:

  • 3 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1/4 cup coconut oil
  • 2 cups almond flour
  • 1/4 cup arrowroot starch (can sub for tapioca flour or cornstarch)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

Directions:

  1. Mix all of the wet ingredients together in a medium bowl until combined. Add in the rest of the ingredients except for the blueberries and mix.

  2. Gently fold in the blueberries. Scoop the batter into a lined or oiled muffin tin.

  3. Bake at 350°F for 15-20 min or until a toothpick comes out dry.
