Creamy Mango Bars

Makes 9 bars
Ingredients:
For the base:
- 2 cups rolled oats
- 1/4 cup maple syrup
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla
- pinch of sea salt
For the mango topping:
- 3 cups chopped mango
- 1/3 cup maple syrup
- 3 tablespoons coconut flour
- 1 tablespoon lemon juice
- 3 egg yolks
- 1 teaspoon vanilla
Instructions:
First blend together the base ingredients in a food processor. Press into a pan and bake at 350°F for 15 min.
Blend the mango topping ingredients in a food processor until smooth. Pour over top of the base and bake for an additional 15-20 min or until it’s slightly jiggly.
Let the bars cool completely and place in the freezer until hard.
Blend all of the filling ingredients together in a food processor until smooth. Pour and smooth the filling on top of the base.
Slice the strawberries and place them on top. Place in the freezer for at least 1 hour or until hard!
