This is my first mango dessert!! Mangos are one of my fav fruits and I finally made a dessert using them!! Definitely will be making more in the future!!

Creamy Mango Bars

Healthy Num Num | Michelle

  • prep time: 15 min
  • freeze time: 25 min
  • total time: 40 min

Makes 9 bars


Ingredients:

For the base:

  • 2 cups rolled oats
  • 1/4 cup maple syrup
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla
  • pinch of sea salt

For the mango topping:

  • 3 cups chopped mango
  • 1/3 cup maple syrup
  • 3 tablespoons coconut flour
  • 1 tablespoon lemon juice
  • 3 egg yolks
  • 1 teaspoon vanilla

Instructions:

  1. First blend together the base ingredients in a food processor. Press into a pan and bake at 350°F for 15 min.

  2. Blend the mango topping ingredients in a food processor until smooth. Pour over top of the base and bake for an additional 15-20 min or until it’s slightly jiggly.

  3. Let the bars cool completely and place in the freezer until hard.

  4. Blend all of the filling ingredients together in a food processor until smooth. Pour and smooth the filling on top of the base.

  5. Slice the strawberries and place them on top. Place in the freezer for at least 1 hour or until hard!
