Chocolate Spinach Muffins


These muffins are so so soft, moist and fluffy! The secret ingredient is spinach and you can’t even tell it’s in them! Love adding in veggies to my desserts when you can’t taste them! You can also bake these in a loaf or cake pan and bake longer!


Chocolate Spinach Muffins

  • total time: 35 min

Makes 10-12 muffins


Ingredients:

  • 3 ripe medium bananas
  • 3 eggs
  • 1 teaspoon vanilla
  • 3 tablespoons maple syrup
  • 3 cups packed spinach
  • 2 1/2 cup almond flour
  • 1/2 cup cocao powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • Optional: 1/2 cup chocolate chips + more for the top!

Directions:

  1. Blend together all of the ingredients in a food processor or high speed blender until smooth. Place the batter in the fridge for 20-30 min.

  2. Scoop into lined muffin tins and bake at 350° for 17-20 min or until a toothpick comes out dry!
