Chai Spiced Banana Bread With Cashew Maple Glaze


This chai spiced banana bread tastes so so good and is perfect for a cozy fall day! It’s so fluffy and moist and the glaze on top is so so good. The banana bread is naturally sweetened with bananas but feel free to add 2 tbsp of maple syrup if you want it sweeter!


Chai Spiced Banana Bread With Cashew Maple Glaze

Makes 1 loaf


Ingredients:

Banana bread:

  • 3 ripe bananas (browner the better)
  • 3 eggs
  • 1/4 cup avocado oil
  • 2 teaspoons vanilla extract
  • 3 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3/4 teaspoon cardamom
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt

Cashew maple glaze:

  • 1/2 cup soaked cashews (measure before soaking)
  • 1/2 cup coconut cream (thick part from the can)
  • 2 tablespoons almond milk
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped pecans

Directions:

  1. Start by soaking your cashews in 1 cup boiling water in a bowl. Soak for at least 30 min - up to overnight.

  2. Mash your bananas in your bowl. Add the rest of the wet ingredients and mix.

  3. Add your dry ingredients to the bowl and mix. Pour into a lined or greased loaf pan and bake at 350°f for 35-45 min depending on the size of your pan.

  4. To make the glaze, blend all of the ingredients together except for the pecans until smooth.

  5. Let the banana bread cool for at least 10 min. Drizzle the glaze on top and sprinkle the chopped pecans down the middle. Cut into slices and enjoy!
