Apple Cinnamon Oatmeal Cups
Another fall breakfast or snack that I love!!! You can have these for breakfast or as a little snack and they taste so so good!
Apple Cinnamon Oatmeal Cups

Makes 10-12 muffins
Ingredients:
- 2 cups rolled oats
- 1 cup almond flour
- 1 cup non-dairy milk (I used coconut)
- 1 apple diced (any kind works)
- 1/4 cup maple syrup
- 2 eggs
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Directions:
- In a large bowl, mix together all of your dry ingredients until combined. 
- In a separate medium bowl, whisk together all of your wet ingredients (except for the diced apple). 
- Add your wet ingredients to your dry ingredients and mix. Add in your diced apple and mix again. 
- Scoop into a lined or greased muffin tin and bake at 350°F for 20-25 min.
