Banana Peanut Butter Muffins


One of my favourite healthy snacks and they are so so fluffy!! Banana + peanut butter is one of my fav combos and these taste so good!
These are naturally sweetened with banana but feel free to add in a couple tablespoons of maple syrup if you’d like!


Banana Peanut Butter Muffins

Makes 10-12 muffins


Ingredients:

  • 3 ripe medium bananas
  • 3 eggs (or 3 flax eggs to make it vegan)
  • 1/3 cup peanut butter
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup chocolate chips

Directions:

  1. In a blender, food processor, or big bowl, mix together all of the ingredients except for the chocolate chips until smooth.

  2. Gently fold in the chocolate chips. Spoon into a lined or greased muffin tin and bake at 350°f for 20-25 min or until a toothpick comes out dry. Enjoy!
