3 Ingredient Samoa Cookies
Yes these cookies are only 3 ingredients!!! They are super simple and easy to make! They also remind me of a healthy girl scout samoas! The cookies are naturally sweetened with banana but feel free to add in honey or maple syrup to make it sweeter!!
3 Ingredient Samoa Cookies

Makes 14-16 cookies
Ingredients:
- 2 cups shredded unsweetened coconut
- 2 medium ripe bananas
- Chocolate chips for drizzling (plus 1 tablespoon coconut oil to melt it with!)
Instructions:
- Start by mashing together the ripe bananas in a medium bowl. Mix in the shredded coconut until combined
- Form into donut holes and gently flatten onto a parchment lined pan. 
- Bake for 25-35 min at 350°F or until golden brown. 
- Let the cookies cool while you melt your chocolate and coconut oil together. 
- Drizzle the chocolate over top and place in the freezer to set!
