Tomato Toast with Whipped Feta


If you’re looking for a spring recipe to make, you have to try this elevated toast recipe! I’ve recently been loving all the fresh spring veggies and these tomato toasts have been a repeat make. Something about the whipped feta and heirloom tomato combo is just so delicious.

These tomatoes can be added to spring salad or pasta dish, and they add plenty of vitamin C and A.

 

How to make this simple yet delicious recipe? Start by making the whipped feta by adding all of the ingredients to a blender and blending until combined. Tip: double the whipped feta recipe to have enough as an extra dip for your veggies (I love dipping with cucumbers).

 

After you’ve made the whipped feta (P.S. don’t skip the fresh garlic!), spread the mixture onto toasted thick sourdough slices. Layer the sliced heirloom tomatoes on top and garnish with flaky sea salt, black pepper, and basil leaves.

 

This recipe is vegetarian and can easily be made gluten free by using a gluten-free type of bread. This recipe can also be made vegan by substituting the feta cheese for a dairy-free type.


Tomato Toast with Whipped Feta

Serves 2


Ingredients:

  • 2 slices of sourdough bread (or your choice of bread)
  • 2 ripe Village Farms Fresh Heirloom Tomatoes
  • 4-6 basil leaves
  • 1 cup cubed feta
  • 2 garlic cloves
  • 1/4 cup olive oil
  • 2 tbsp water to thin
  • 1 tsp herb seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • Sprinkle of flaky sea salt to garnish

Directions:

  1. Start by making the whipped feta by adding all ingredients to a blender. Blend until combined. Add in a little more water if needed to get to your choice of consistency.
  2. Toast sourdough slices. Add whipped feta on top.
  3. Slice heirloom tomatoes and layer on the toast.
  4. Garnish with fresh basil and sprinkle with flaky sea salt. Enjoy!
