Spinach Red Pepper Egg Bites

Makes 10-12 cups
Ingredients:
- 10 eggs
- 1 cup chopped spinach
- 1 red bell pepper diced
- 1/4 cup nutritional yeast - or vegan cheese
- salt + pepper to taste
Directions:
- Whisk together your eggs until combined. Add in the rest of the ingredients and mix again. 
- Spoon into a greased or lined muffin tin and bake at 350°F for 20-25 min. Enjoy!
