Lemon Greek Potatoes
These little potato wedges are inspired by one of the greek restaurants we go to and they taste so so good!! These would make the perfect side dish with some greek salad and rice!
Lemon Greek Potatoes

Serves 3-4
Ingredients:
- 4-5 yellow potatoes
- 1 cup veggie broth
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- salt + pepper to taste
Directions:
Start by washing and slicing your potatoes into wedges.
Place the wedges into a baking dish and add in the rest of the ingredients. Mix until combined. Spread the potatoes out so there is an even layer.
Cover the baking dish with a piece of parchment paper first and aluminum foil on top.
Bake at 425°F for 20-25 min. Remove the aluminum foil and parchment paper and bake for another 20-25 min or until all the liquid is gone and the potatoes are roasted to your liking!
