Healthy Thai Peanut Stir Fry

Ingredients:
Thai peanut sauce:
- 1/2 cup peanut butter
- 3 tablespoons soy sauce or tamari
- juice from one lime (about two tablespoons)
- 1 tablespoon maple syrup or honey
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 - 1/3 cup water to thin
- red pepper flakes (optional)
Stir fry:
- 1 large yellow onion
- 3 cloves garlic
- 1/2 cup shredded or thinly sliced red cabbage
- 2 medium carrots thinly sliced
- 1 cup broccoli florets
- 1/2 cup noodles
- 2 tablespoons sesame seeds
Instructions:
Stir all the sauce ingredients together except for the water. Slowly add the water until you reach your desired consistency.
Fry your choice of veggies and/or cooked noodles in avocado or coconut oil on low heat.
Turn off the heat and then add the sauce.
Garnish with sesame seeds and cilantro.
