Fluffy Scones


These taste so so good with some vegan or regular butter and could go well with some eggs and sausages for brekkie! I also love to slice them and re-toast them in the toaster or oven!


Fluffy Scones

Makes 6-8


Ingredients:

  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 2 eggs (or flax eggs)
  • 3 tablespoons avocado or olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • optional: vegan or regular butter

Directions:

  1. Mix together with a spoon all of the ingredients in a large bowl.

  2. Roll into balls and slightly flatten onto a parchment lined pan.

  3. Bake at 350°f for 25-30 min. Slice in half and spread your butter if using and enjoy!
