Creamy Lemon Garlic Broccoli Pasta


The main ingredient in this recipe is cauliflower and you can’t even taste it!! It makes the sauce super super creamy and the lemon and garlic combo tastes so so good! I stir fried some broccoli to go with it and added in chickpea pasta!


Creamy Lemon Garlic Broccoli Pasta

Serves 2-3


Ingredients:

Lemon garlic sauce:

  • 2 medium yellow onions
  • 3 garlic cloves
  • 1 teaspoon olive oil
  • 1 small head of cauliflower (about 1 cup)
  • 1/3 cup veggie broth or water
  • 1/2 cup almond milk or any non-dairy milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt + pepper to taste

Broccoli:

  • 1 cup chopped broccoli
  • 1 tablespoon olive oil

Other:

  • Pasta of choice - I used chickpea pasta!

Directions:

  1. Start by heating up your olive oil on medium heat in a saucepan. Add in your onions and garlic and sauté until golden brown.

  2. Add in your water/veggie broth and almond milk and mix. Add in your chopped cauliflower and simmer until your cauliflower is fork tender.

  3. Once the mixture has cooled slightly, add it in along with the rest of the sauce ingredients to a high speed blender or food processor. Blend until smooth.

  4. For the broccoli, heat up the olive oil in a small skillet. Add in your chopped broccoli and fry until cooked.

  5. To assemble, add your cooked pasta of choice, broccoli, and lemon garlic sauce to a bowl. Enjoy!
