Strawberry Chocolate Cheesecake Bars

Makes 14 bars

Ingredients:

For the base:

• 1 cup almonds
• 1/2 cup walnuts
• 1/4 cup peanut butter
• 1/4 cup Earth Echo Foods Cacao Superfood Blend
• 1/4 cup maple syrup
• 2 tablespoons melted coconut oil

For the filling:

• 1 1/2 cup soaked cashews
• 2/3 coconut cream
• 1/4 cup Earth Echo Foods Cacao Superfood Blend
• 1/4 cup maple syrup
• 1 tablespoon lemon juice

• 1 teaspoon vanilla

• Sliced strawberries for the top

Instructions:

1. Start by blending together all of the base ingredients in a food processor until the mixture holds together.

2. Press the base mixture into a pan and place in the freezer while you make the filling.

3. Blend all of the filling ingredients together in a food processor until smooth. Pour and smooth the filling on top of the base.

4. Slice the strawberries and place them on top. Place in the freezer for at least 1 hour or until hard!
