Soft Gingerbread Cookies

Makes 10-12 cookies
Ingredients:
- 2 cups almond flour
- 2 tablespoons tapioca starch (can sub for arrowroot flour or corn starch)
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon baking powder
- pinch of salt
- 1/4 cup maple syrup
- 1 egg
- 1 tablespoon molasses
- 1 teaspoon vanilla extract
- optional: granulated sugar to roll in (I used a monk fruit blend)
Directions:
Start by mixing together all of the dry ingredients in a large bowl.
Add in the wet ingredients and mix again.
Roll into balls and roll in granulated sugar is using. Flatten on to a parchment lined pan and bake at 350°f for 10-15 min!
