Chocolate Chip Banana Muffins


These muffins are so fluffy and yummy!! The chocolate chips are optional but so so good! You can also add in chopped walnuts too!


Chocolate Chip Banana Muffins

Makes 10-12 muffins


Ingredients:

  • 3 ripe bananas
  • 3 eggs (can sub for 3 flax eggs see notes)
  • 2 tablespoons avocado oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 3 cups almond flour
  • optional: 2 tablespoons maple syrup to make it sweeter
  • optional: 2/3 cup chocolate chips

Directions:

  1. Start by mashing up the bananas in a medium sized bowl. Add the rest of the wet ingredients and mix until combined.

  2. Add the dry ingredients to the bowl and mix until just combined. Add in the chocolate chips and gently mix.

  3. Grease or line a muffin pan and spoon the mixture in. Sprinkle chocolate chips more chocolate chips if you’d like!

  4. Bake at 350° for 20-25 min or until a toothpick comes out dry!

  5. Enjoy!

Notes: To make your flax eggs, combine 3 tablespoons ground flaxseeds with 6 tablespoons water and let sit for 10 min to gel.
