Chickpea Cookie Dough Bars


I promise you, you can’t even taste the chickpeas and they make this dessert so so creamy!! Make sure to remove the skin off the chickpeas - can take a little time but so worth it!

Makes 8-10 bars


Ingredients:

  • 1 can chickpeas (about 1 1/2 cups)
  • 1/2 cup almond flour
  • 1/3 cup cashew butter (can sub for any nut/seed butter)
  • 1/4 cup honey of maple syrup
  • 2 teaspoon vanilla
  • 1/2 cup chocolate chips
  • 1/3 cup chocolate chips + 1 tablespoon coconut oil

Directions:

  1. Start by rinsing your chickpeas. To remove the skin, you can either hand peel each one or place them in between two towels and gently rub them.

  2. Blend all of the ingredients together except for the chocolate chips in a food processor until smooth. Taste to see if you’d like to sweeter and add more sweetener.

  3. Fold in the chocolate chips. Place into a pan and place in the freezer while you melt your chocolate for the top.

  4. Melt together the rest of the chocolate chips and coconut oil. Pour over top of the bar and place bake into the freezer until hard!
