Chai Spiced Snickerdoodle Cookies

Looking for a fall dessert and treat? I got you covered! These little snickerdoodles are so soft and melt in your mouth. These cookies remind me of being cozy and wrapped in blanket sipping a chai tea, which would taste so good with these cookies!!

Chai Spiced Snickerdoodle Cookies

Healthy Num Num | Michelle

Makes 8 cookies


Ingredients:

  • 2/3 cup softened coconut oil (not melted!)
  • 1/3 cup coconut sugar
  • 2 teaspoons vanilla
  • 1 egg
  • 2/3 cup coconut flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cardamom

Cinnamon sugar:

  • 2 tablespoons coconut sugar
  • 1 teaspoon cinnamon

Directions:

  1. Start by creaming together the coconut oil and coconut sugar in a medium bowl until smooth. Add in your egg and vanilla and mix.

  2. Add the rest of the ingredients and mix until combined.

  3. Mix your cinnamon and coconut sugar together in a small bowl.

  4. Roll into balls and then roll in your cinnamon sugar mixture.

  5. Flatten on to a parchment lined pan and bake at 350°f for 8-10 min.
