Banana Pancake Bites

Serves 2-4
Ingredients:
- 1 cup Pamela's Products pancake mix
- 2/3 cup water
- 1 egg
- 1 tbsp olive oil (plus more to cook the pancakes)
- 2 bananas
- Toppings: honey or maple syrup, fresh raspberries, banana slices, powdered monk fruit
Directions:
- Make pancake mix according to instructions.
- Slice bananas into coins. Dip each slice in the pancake mix and cook on medium-low heat.
- Add toppings and enjoy!
