These little pancake bites are perfect for your weekend baking! You might have a little extra batter in the end, which you can use to make regular pancakes or slice more bananas for it!

Banana Pancake Bites

Healthy Num Num | Michelle

Makes around 2 cups granola


Ingredients:

  • 1/2 cup oat flour
  • 1/2 cup almond flour
  • 3/4 cup almond milk (or any non-dairy milk)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 tablespoon avocado oil for frying
  • 2 bananas
  • Optional: Honey or maple syrup to drizzle on top

Directions:

  1. Start by mixing together all of the pancake mix ingredients until smooth. If you want the batter a little thinner you can add more almond milk.

  2. Slice your bananas into 1/2 inch slices and dip and cover them in the batter.

  3. Heat up the avocado oil in a frying pan on low heat. Fry your banana slices for 1-2 min on each side or until they are cooked!

  4. Drizzle with honey or maple syrup and enjoy!
