Sesame Tempeh Bowls

Healthy Num Num | Michelle

  • prep time: 20 min
  • bake time: 30 min
  • total time: 50 min

Serves 2-3

Ingredients:

  • 200 grams tempeh - about 1 cup chopped
  • 1/4 cup soy seasoning, tamari, soy sauce, or coconut aminos
  • 2 tablespoons water
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 tablespoon sesame seeds
  • 1 tablespoon tapicoa starch - can sub for arrowroot flour or cornstarch!
  • veggies of choice (I used about 2 cups broccoli!)
  • white or brown rice

Directions:

  1. Start by making your tempeh marinade by mixing together all of the ingredients in a small bowl. Add in the chopped tempeh and mix. Let the tempeh marinade for 1-2 hours in the fridge.

  2. Spread the tempeh onto a parchment lined pan along with your cut up veggies. Pour the rest of the marinade on top and bake at 425°F for 25-35 min. Halfway through mix the tempeh and veggies.

  3. Serve with rice and enjoy!
