I added smoked salmon and vegan cream cheese and it was so so good!! The bagels are fluffy and chewy and you would not believe they are paleo!!

Healthy Paleo Bagels

Healthy Num Num | Michelle

Makes 6-8 bagels


Ingredients:

  • 1 cup cassava flour
  • 1 1/2 cup arrowroot flour
  • 4 eggs + 1 for the egg wash
  • 1/4 cup olive oil
  • 2 tablespoons non-dairy milk (I used almond)
  • 1 tablespoon water
  • 1 teaspoon baking powder
  • Salt + pepper to taste
  • Everything But the Bagel Seasoning (or sesame seeds, poppy seeds, dried onion)

Other:

  • smoked salmon
  • vegan or regular cream cheese

Directions:

  1. Combine all of the dough ingredients together in a food processor and blend until combined.

  2. Bring a huge pot of water to boil. Form and shape your bagels (I like to make mini bagels). Once the water is boiling, gently drop your bagels in. Boil for about a minute or until the bagels rise to the top.

  3. Place the bagels on a parchment lined sheet. Whisk your egg and spread over top each bagel.

  4. Bake at 350°F for 20-25 min!
