This bowl is a perfect dinner to end the night! It’s filled with lots of healthy fats, carbs, and protein! Loved loved eating this and it tasted amazing!

Healthy Loaded Burger Bowls

Servings: 1-2


Ingredients:

For the salad base:

  • salad greens
  • cucumber
  • grape tomatoes
  • bell pepper
  • pickled red onions
  • lots of nutritional yeast
  • sesame seeds
  • sunflower seeds
  • olive oil tahini dressing (see below)

Olive oil tahini dressing:

  • 1 tablespoon olive oil
  • 2 teaspoons tahini
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder or 1 garlic glove minced
  • 1/4 teaspoon honey
  • salt + pepper to taste

Lentil zucchini stirfry:

  • 1/2 cup cooked lentils
  • 1/2 medium zucchini
  • 2 tablespoons avocado oil
  • 1 medium onion diced
  • 3-4 garlic cloves minced
  • 4 medium mushrooms diced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • salt + pepper to taste

Roasted sweet potato:

  • 1 large sweet potato
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon avocado oil
  • salt + pepper to taste

Instructions:

  1. Start by making the salad by cutting up all the ingredients and adding them to a bowl. Then mix the dressing ingredients together and pour over top.

  2. In a frying pan add the oil, onion, garlic, garlic powder, paprika and sauté until golden brown. Then add the cooked lentils, zucchini and mushroom. Then add the stirfry mixture to the salad bowl.

  3. For the sweet potato, cut it into wedges and add the oil and spices. Mix together and bake on a parchment lined pan for 20- 25 min at 425°F. Then add the sweet potato fries to the bowl. I also added chipotle mayo (not pictured!)

  4. I also added baked salmon w/ salt + pepper and mayo!
