My biggest tip to making a salad taste yummy is using a really good dressing!! This dressing never fails me and it tastes so so good with all the crunchy veggies!

Crunchy Peanut Salad

Healthy Num Num | Michelle

Serves 2


Ingredients:

Base:

  • 1/4 of a red or green cabbage thinly sliced
  • 2 bell peppers
  • 1/4 of a large cucumber thinly sliced
  • 1 large carrot

Peanut dressing:

  • 1/4 cup peanut butter
  • 1 tablespoon soy seasoning/coconut aminos (or low sodium soy sauce)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • 2 tablespoons cold water to thin

Directions:

  1. Start by thinly slicing all your veggies. Place them in a big bowl while you make your dressing.

  2. Blend all the dressing ingredients together in a high speed blender until smooth. Pour over your salad and enjoy!
