Oatmeal Chocolate Chip Cookies

Healthy Num Num | Michelle

Makes 12-14 cookies


Ingredients:

  • 1 cup rolled oats
  • 1 cup almond flour
  • 1/3 cup softened coconut oil (not melted!)
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/3 cup chocolate chips

Directions:

  1. Start by mixing together all of the dry ingredients until combined.

  2. Add in the soft coconut oil (should be the texture of soft butter) and eggs. Mix together until there are no coconut oil clumps. You may need to use a pastry cutter or your hands.

  3. Add in the chocolate chips and mix. Form into balls and flatten onto a parchment lined pan. (If your mixture is hard to roll into balls - place it in the fridge for 15-20 min)

  4. Bake at 350°f for 10-13 min. Let cool and enjoy!
