Healthy Chocolate Peanut Butter Cups

One of my favourite combos is peanut butter + chocolate and this recipe is the perfect ratio of both!

I wanted to create a healthy Reese’s peanut butter cup recipe and this is what I came up with! It’s super easy to make and you can substitute the peanut butter for any nut/seed butter! I also recommend adding on top flaky sea salt, nuts, or chocolate chips for a crunch! I made my own chocolate coating but you can also melt chocolate chips!

Healthy Chocolate Peanut Butter Cups

  • prep time: 20 min
  • freeze time: 25 min
  • total time: 45 min
  • makes 6-8 cups

Ingredients:

For the peanut butter filling:

  • 1/2 cup crunchy peanut butter
  • 1/2 tablespoon coconut flour
  • 1 tablespoon maple syrup
  • pinch of salt (if your peanut butter isn’t salted)

For the chocolate (or you can melt chocolate chips!):

  • 1/2 cup melted coconut oil
  • 1/2 cup cocoa powder
  • 1/4 cup maple syrup

Instructions:

  1. Start by either making the chocolate mix or melting your chocolate chips. Spoon 1-2 tablespoons of the chocolate into the bottom of a muffin liner. Don’t use more than half the chocolate for this. Tilt the pan slightly and gently turn to coat the sides.

  2. Make the peanut butter filling in a small bowl. Scoop out around 1 tablespoon of dough and roll into a ball. Flatten the ball to a disk and place in the centre of the cups.

  3. Pour the remaining chocolate over the peanut butter filling to cover it completely.

  4. Place in the freezer for 15-20 min or until it is hardened. Store in the fridge or freezer.

  5. Enjoy!
