Love adding in walnuts and chocolate chips - but those are optional!
I didn’t add in any sweetener because the ripe bananas make it super sweet but feel free to add in a little maple syrup to your liking!

Fluffy Banana Bread

Healthy Num Num | Michelle

Makes 1 loaf


Ingredients:

  • 3 ripe bananas
  • 3 eggs (can sub for 3 flax eggs see notes)
  • 1/4 cup avocado oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp Fleischmann's Baking Soda
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 3 cups almond flour
  • optional: 2 tablespoons maple syrup to make it sweeter
  • add ins - chocolate chips, walnuts, sliced banana (optional)

Directions:

  1. Blend all ingredients (except for the chocolate chips) together in the food processor or high speed blender.

  2. Grease or line a loaf pan with parchment paper and pour the mixture in. Sprinkle chocolate chips, nuts, or sliced banana if you’d like!

  3. Bake at 350° for 40-55 min or until a toothpick comes out dry!

Notes: To make your flax eggs, combine 3 tablespoons ground flaxseeds with 6 tablespoons water and let sit for 10 min to gel.
