Crunchy Cinnamon Granola

Key to making the best crunchy granola: adding in buckwheat groats and letting it cool completely after it comes out of the oven!! Trust me, these two things will make all the difference. Also have you ever had cinnamon toast crunch cereal? This granola reminds me of it but with good for you ingredients!

Crunchy Cinnamon Granola

Healthy Num Num | Michelle

Makes around 2 cups granola


Ingredients:

  • 1 cup rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup shredded coconut
  • 1/4 buckwheat groats
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Directions:

  1. Mix together all of your ingredients in a medium bowl until combined.

  2. Spread onto a parchment lined pan and bake at 350°F for 15-20 min.

  3. Let the granola cool completely before breaking apart into chunks!
