Apple Cinnamon Oatmeal Cups

Healthy Num Num | Michelle

Makes 10-12 muffins


Ingredients:

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1 cup non-dairy milk (I used coconut)
  • 1 apple diced (any kind works)
  • 1/4 cup maple syrup
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Directions:

  1. In a large bowl, mix together all of your dry ingredients until combined.

  2. In a separate medium bowl, whisk together all of your wet ingredients (except for the diced apple).

  3. Add your wet ingredients to your dry ingredients and mix. Add in your diced apple and mix again.

  4. Scoop into a lined or greased muffin tin and bake at 350°F for 20-25 min.
