Another fall pumpkin recipe that I’m loving!!! These cookies are so soft and taste so good! This recipe makes about 18-20 medium cookies so feel free to half it for a smaller portion!

Soft Pumpkin Cookies

Healthy Num Num | Michelle

Makes 18-20 cookies


Ingredients:

  • 2/3 cup softened coconut oil (not melted!)
  • 2/3 cup coconut sugar
  • 1/2 cup pumpkin purée
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups almond flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons pumpkin seeds for the top

Directions:

  1. Cream together the coconut oil and coconut sugar in a medium bowl until smooth. Add in rest of the wet ingredients and mix.

  2. Add the rest of the dry ingredients, except for the pumpkin seeds, and mix. The batter will be a little sticky.

  3. Scoop into balls and flatten onto a parchment lined pan. Sprinkle with pumpkin seeds and bake at 350°F for 13-16 min. Let cool and enjoy!
