Raspberry Crumble

Healthy Num Num | Michelle

Serves 2


Ingredients:

Raspberry base:

  • 3 cups frozen or fresh raspberries
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Crumble:

  • 1 cup rolled oats
  • 1/4 cup hemp seeds
  • 1/4 cup chopped almonds
  • 3 tablespoons maple syrup
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract

Optional: coconut yogurt or vanilla ice cream to top!

Directions:

  1. In a medium bowl, mix together all of the raspberry base ingredients. Spoon into a dish or round ramiken.

  2. Mix together your crumble ingredients in another medium howl until combined. Spread it over top of the raspberry base.

  3. Bake at 375°F for 35-45 min. Optional: top with coconut yogurt or vanilla ice cream and enjoy!
