Made these peanut butter chocolate covered eggs for Easter and they were so good! Definitely recommend adding peanuts on top for a crunch!

Peanut Butter Chocolate Covered Eggs

  • freeze time: 15 min
  • total time: 30 min

Makes 11-12 eggs


Ingredients:

  • 1 cup any nut/seed butter (I used half peanut butter + half tahini)
  • 3 tablespoons coconut flour
  • 3 tablespoons coconut sugar
  • 1 teaspoon vanilla
  • Crushed peanuts for garnishing (optional)

Chocolate dip: (Or you can melt chocolate chips!)

  • 2 tablespoons melted coconut oil
  • 1 tablespoon coconut sugar
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract

Instructions:

  1. Start by mixing together the egg ingredients in a medium bowl. Roll into balls and then form into an egg shape.

  2. Place on a parchment lined pan and place in the freezer while you make/melt your chocolate.

  3. Either melt chocolate chips or make the chocolate dip by mixing all the ingredients together in a small bowl.

  4. Dip the eggs in the chocolate and place them back onto the parchment lined pan. Sprinkle peanuts, more chocolate chips or whatever you’d like on top!

  5. Place the eggs back in the freezer for 10-15 min or until hard.

  6. Enjoy!
