Healthy Strawberry Chocolate Cookie Skillet

This giant cookie is so so yummy and fluffy! It’s the perfect cookie to strawberry to chocolate ratio and tastes so good!

  • cook time: 25 min
  • total time: 45 min

Ingredients:

  • 6 tablespoons softened coconut oil
  • 4 tablespoons peanut butter
  • 1/3 cup coconut sugar
  • 2 flax eggs (2 tablespoons flax egg to 5 tablespoons water)
  • 1 teaspoon vanilla
  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1 cup diced strawberries

Instructions:

  1. Start by making the flax eggs by combing the ground flaxseed with water. Let the mixture gel and sit for 5-10 min.

  2. In a large bowl, cream together the coconut oil, coconut sugar, and peanut butter until smooth. Then add the vanilla and flax egg mixture.

  3. Add the rest of the ingredients except the chocolate chips and strawberries and mix.

  4. Fold in gently the chocolate chips and strawberries.

  5. Grease an 8-inch skillet with coconut oil and press the cookie mixture in. Bake at 350°F for 23-26 min or until golden brown.

  6. Enjoy!
