Healthy Pecan Cookie Dough Bites

These cookie dough bites are a perfect snack for people who love eating cookie dough straight out of the bowl (aka me)! They have toasted pecans added in for an extra crunch and I dipped and drizzled them in chocolate!! If you aren’t a nut fan you can replace them with chocolate chips!

  • prep time: 20 min
  • freeze time: 20 min
  • total time: 40 min
  • makes 10-12 bites

Ingredients:

  • 1/4 cup chopped pecans - (and/or chocolate chips!)
  • 1/4 cup softened coconut oil (not melted)
  • 2 tablespoons coconut sugar
  • 1/2 flax egg (1 1/2 teaspoons ground flaxseed and 1/2 tablespoons water - Mix and let sit for 10 min)
  • 1 teaspoon vanilla
  • Pinch of sea salt
  • 1 1/4 cups almond flour
  • Melted chocolate chips or you can make your own chocolate dip! (See below)

Chocolate dip:

  • 2 tablespoons melted coconut oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract

Instructions:

  1. Start by making the flax egg and let it stop for 10 min to gel.

  2. Toast the chopped pecans at 350°F for 10 min or in a dry skillet for 4-5 min on medium heat - careful not to burn!

  3. Combine the coconut oil and coconut sugar in a medium bowl and cream together until smooth. Add in the vanilla and flax egg and mix. Next, add in the salt and almond flour. Mix together and add in the pecans and/or chocolate chips.

  4. Roll into balls and place into the freezer for 5-10 min. At this point you can either eat them like this or dip them in chocolate!

  5. You can either melt chocolate chips of make the chocolate dip by melting and mixing all of the ingredients together.

  6. Dip the balls in the chocolate and sprinkle crushed nuts on top. Place in the freezer for an additional 5-10 min or until set.

  7. Enjoy!
