These cookies are so so soft and are the perfect little snack! I used to never be a lemon dessert lover but now I am and these are perfect!

Healthy Lemon Cookies

Healthy Num Num | Michelle

Makes 8-10 cookies


Ingredients:

  • 3 tablespoons softened coconut oil (not melted!)
  • 3 tablespoons cashew butter (or any nut/seed butter)
  • 1/4 cup coconut sugar
  • 1 flax egg (1 tablespoon ground flaxseed + 2 tablespoons water)
  • 1 teaspoon vanilla
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 1/3 cup almond flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Directions:

  1. Start by making your flax egg by mixing together the ground flaxseed and water in a small bowl. Let it sit for 5-10 min to “gel”.

  2. Add in all of your ingredients together in a medium bowl and mix until combined. Roll into cookies and flatten onto a parchment lined pan.

  3. Bake at 350°F for 10-12 min.
