Healthy Fluffy Banana Bread

This is one of my staple recipes and is a winner every time I make it! Because it is made with almond flour, the texture is so fluffy, light and moist! You can add in peanut butter, mix in chocolate chips and/or walnuts, or slice a banana on top!

Healthy Fluffy Banana Bread

Healthy Num Num | Michelle

  • prep time: 20 min
  • bake time: 55 min
  • total time: 1 hour and 15 min
  • makes 8-10 slices

Ingredients:

  • 3 ripe bananas
  • 3 eggs
  • 2 tablespoons maple syrup
  • 1/4 cup avocado oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 3 cups almond flour
  • Add ins - chocolate chips, walnuts, sliced banana (optional)

Instructions:

  1. Start by mashing up the bananas in a medium sized bowl. Add the rest of the wet ingredients and mix until combined.

  2. Add the dry ingredients to the bowl and mix until just combined.

  3. Grease or line a pan with parchment paper and pour the mixture in. Sprinkle chocolate chips, nuts, or sliced banana if you’d like!

  4. Bake at 350° for 45-55 min or until a toothpick comes out dry!

  5. Enjoy!
