Fluffy Christmas Fruit Cake

Healthy Num Num | Michelle

Makes 1 8" cake


Ingredients:

  • 1 cup raisins
  • 1 cup chopped dates
  • 1/2 cup chopped dried apricots
  • 2 cups boiling water
  • 2 cups almond flour
  • 2 teaspoon cinnamon
  • 1 teaspoon all spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 4 eggs
  • 1/4 melted coconut oil
  • Juice from half a large orange
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • optional: powdered sugar (i used a monk fruit blend)

Directions:

  1. Start my adding and cutting up the dried fruit (tip: cut your dates and apricots with scissors, so much easier!). Add your dried fruit to a bowl with your boiling water. Let it sit for at least 30 min or overnight.

  2. In a large bowl, add and mix all your dry ingredients together. Add and mix in the wet ingredients (eggs, coconut oil, orange juice and zest, and vanilla).

  3. Strain your dried fruit and gently mix it into the batter. Grease or line an 8” cake pan with coconut oil or parchment paper. Pour the batter in and spread into an even layer.

  4. Bake at 350° F for 50-60 min, or until the cake is fully cooked through, (check by sticking a knife or toothpick in the center - it should come out close to dry with a few crumbs on it). Garnish with powdered sugar if using and enjoy!
