Creamy Nanimo Bars

This is a healthy remake of nanimo bars - if you haven’t heard of them they are so so good but I wanted to created a healthier version! This recipe uses tumeric powder to get a natural yellow colour!

Creamy Nanimo Bars

Healthy Num Num | Michelle

  • prep time: 20 min
  • freeze time: 60 min
  • total time: 80 min

Makes 14-16 squares


Ingredients:

For the chocolate base:

  • 1 cup medjool dates (about 18-20)
  • 1 cup walnuts
  • 1/4 cup cocoa powder

For the cream:

  • 1 cup soaked cashews (soak the cashews in boiling water for at least 1 hour or overnight! This makes the bars super creamy!)
  • 1 cup coconut cream (the thick part from the can!)
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla
  • Juice from 1 lemon (about 2 tablespoons)
  • 3/4 teaspoon tumeric powder

Chocolate topping (or you can use melted chocolate chips!):

  • 1/3 cup melted coconut oil
  • 1/3 cup honey
  • 3 tablespoons cocoa powder

Instructions:

  1. Start by combining all of the base ingredients together in a food processor until combined. Spread into a parchment line pan and place in the freezer while you make the cream middle.

  2. Combine all of the cream ingredients together and taste the batter if you’d like to add more sweetener!

  3. Pour onto the base and place it back into the freezer while you make/melt your chocolate.

  4. Mix all of the chocolate ingredients together (or you can melt chocolate chips) and pour over top the cream middle. Place in the freezer until hard and cut into bars!
