Omg lately I’ve been obsessed with all things lemon!! These little coconut lemon energy bars smell and taste so so good!!

Healthy Coconut Lemon Energy Bars

Healthy Num Num | Michelle

  • prep time: 10 min
  • freeze time: 30 min
  • total time: 40 min

Makes 6-8 bars


Ingredients:

  • 1 cup shredded coconut
  • 1 cup cashews
  • 1 cup packed medjool dates
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Directions:

  1. In a food processor blend together all of the ingredients until combined.

  2. Press into a pan and place in the freezer for 20-30 min or until hard - you can also roll these into little balls!

  3. Cut into squares and enjoy!
