Chocolate Peanut Butter Protein Cookies

Makes 14-16 medium cookies


Ingredients:

  • 2/3 cup softened coconut oil (not melted)
  • 2/3 cup coconut sugar
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 flax eggs (2 tablespoons ground flaxseed + 2 tablespoons water)
  • 2 cups almond flour
  • 1/4 cup chocolate peanut butter plant protein powder
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chips

Directions:

  1. Start by making the flax eggs by mixing together the ground flaxseed and water in a small bowl. Let the mixture sit for at least 10 min.

  2. Cream together the coconut oil and coconut sugar in a medium bowl until smooth. Make sure there are no chunks of coconut oil. Add in the peanut butter, vanilla, and flax eggs and mix.

  3. Add in the rest of the ingredients except for the chocolate chips and mix until combined.

  4. Gently fold in the chocolate chips.

  5. Roll and flatten the cookies onto a parchment lined pan. Bake at 350°F for 10-13 min.
